The legend of black dragon tea

Oolong, or wulong, means black dragon. Oolongs are a category of teas that are partially fermented and range from nearly green, such as our Tie Guan Yin, to some that are nearly black. According to legend, oolong was discovered and received its name when a black serpent scared a farmer away from the tea leaves he was drying one day. He returned a few hours later to find his tea browned around the edges by the sun.

Later, these lightly fermented leaves produced a delightful brew, clearer than a typical green, yet lighter than a red or black tea. And so oolongs were born.
The best oolongs today are picked in the morning on clear days so they can spend time in the sun.

Tie Guan Yin is one of the "10 famous teas of China" and is the best known of all the oolongs in the tea-loving country. Lightly fermented, it looks like an ultra-clear green tea. But it has its own delicate flavor infused with notes that linger on the pallet. Some described hints of peaches, citrus or honey without the sweetness.
