T he Chinese drink more green tea than any other. But the drink they love is a clear brew, known for its subtle flavors. Premium Chinese green tea is never bitter or grassy. Our green tea, including a Bi Luo Chun, should arrive from China early in March. Bi Luo Chun, which means Green Snail Spring, takes its name from its appearance. Each leaf is rolled in a tight spiral shape producing something that looks a bit like a small salt water snail shell. All great Cinese green teas have one thing in common. They are the tender growth tips, one bud and one little leaf, hand plucked and quickly dried and processed before they can oxidize. Often they are picked only in the spring when the young leaves are most tender, although some teas have a second growing season in the fall.
